Making Spices(Masala) At Home

Now days you will get all spices readymade in market. But those are containing lots of impurities which is not good in taste as well as not good for your health. So it is always better to make spices at home after cleaning them by your own.

Here some methods to make spices at home.

In North India most common spices is “Garam Masal”, “Sabji Masala”, Panchforan Masala, Chaat Masala, Jaljira, etc.

Making Garam Masala at Home:

Garam masala is a combination of different hot spices. For making garam masala you can use combination of different spices, in which some are basic and some are optional because they are either very hot or very expensive. Garam masala combination can be changed for different uses like for vegetables they are different from non-veg.

Here are list of ingredients for making garam masala at home, some i have marked as option with description.

  • Jeera(Cumin seeds) 2 spoon
  • Laung( Clove) 5-6
  • Dalcheeni 2-3 stick(1 inch)
  • Kali Mirch (Black pepper) 1-2 tbl spoon
  • Tej Patta (Bay leaves) 2
  • Badi Ilayachi(Black cardamom) 2
  • Chhoti Ilayachi (Green cardamom) 2-3
  • Kebab Cheeni (Allspice) 1 tbl spoon
  • Shahi Jeera(Caraway Seeds) 1 tbl spoon (Optional because very hot and expensive, use it for very hot and spicy recipes)
  • Javitri/Jaifal(Mace/Nutmeg) 1 tbl spoon grind(Optional because very hot and expensive, use it for very hot and spicy recipes)
  • Dhaniya Powder (Optional, use only when you want to make garam masala for specific purpose, not required because we are adding dhaniya separately in different dishes).

Now clean, wash and dry these spices in sine. Now roast lightly all spices in a pan and make a fine powder using grinder, Garam masala is ready for use. Keep this powder in airtight jar and use it in you different recipes.

Tips: You can use this spices in appropriate ratio by just crushing them in a Khalbatta. This will give you more freshness in your dishes.

Making Sabji Masala at Home

For making sabji masala following ingredients are required

  • Garam masala 1 spoon
  • Dhaniya powder(Home Made) 5-6 spoon
  • Haldi powder 2-3 spoon
  • Red Chili Powder 1-2 spoon(to taste)

Mix all above ingredients and use as vegetable masala.

Tips: You can change combination and quantity ratio according to your taste.

Making Panchforan at Home

Ingredients

  • Mustard seeds 1 tbl spoon
  • Kalongi(Mangrail) 1 tbl spoon
  • Sauf 2 spoon
  • Methi seeds 1 tbl spoon
  • Ajawain seeds 1 tbl spoon
Tips : You can use above ingredients for chhauka for kaddu vegtable as well other like Baingan, Tori, etc. You can make bharawan masala using above ingredients roasted powder with garlic and dhaniya powder.

Making Jaljira Powder at Home

Ingredients

  • Cumin seeds 2 big spoon
  • Mango powder 2 spoon
  • Sonth(Dried Ginger) powder 1 tbl spoon
  • Black pepper powder 1/2 tbl spoon
  • Ajawaing 1/2 tbl spoon
  • Laung 2-3
  • Plain salat 1 spoon
  • Kala Namal 1 spoon
  • Mint powder (Dried Pudeena leaves) 1 spoon

Roast all ingredients except Salts, and Mint powder.

Now make powder of all ingredients and put this jaljira powder in a airtight jar and use it when required.

Making Chaat Masala Powder at Home

Ingredients

  • Cumin seeds 1 tbl spoon
  • Mango powder 1/2 tbl spoon
  • Sonth(Dried Ginger) powder 1 tbl spoon
  • Black pepper powder 1/2 tbl spoon
  • Kala Namal 1 spoon
  • Galam masala 1 tbl spoon
  • Ajwain 1/2 tbl spoon
  • Anardana 1 tbl spoon
  • Red chili powder 1 tbl spoon

Now make powder of all ingredients and put this jaljira powder in a airtight jar and use it when required.
