Recipe: Baigan(Eggplant or Brinjal) ka bharta

It is a tasty preparation that is can be enjoyed with dal-chawal, rice or parathas. So the following is the recipe of tasty bharta.


-1 medium sized brinjal (baingan / eggplant)

-2 medium sized boiled and peeled potatoes

-2 tbsp mustard oil

– Chopped garlic cloves

– Chopped green chillies salt to taste

– 1 lemon
– Chopped coriander (dhania) for garnishing


-First step is to cook brinjal. For that there are three methods and you can use any one as per convenience.

-First method is take brinjal grease some mustard oil on its skin and put it on stove top flame and cook till it is roasted properly.

-Second is put it in cooker to steam cook.

-Third is you can put brinjal in a polythene after pricking it with fork to make vent for steam and put inside microwave to microwave for around 5 mins. After that if you like you can roast it on stove top for 2 mins. 
– Once you have boiled or roasted brinjal peel its outer skin and put it in bowl. Mash it properly. Now add boiled potatoes, chopped garlic, chilies, salt and oil and mix well.

-Add fresh lemon juice to it. Garnish with dhania patti and serve.
