Aloo ka paratha with dahi (curd) is one of my favorite dish. I would like to share its recipe with you. This recipe is very famous in north India or you can say all over India & Pakistan. You can find this dish very easily on street stalls and restaurant.
- Plain flour (Aata) 2 cups
- Dried Fenugreek leaves(kasoori methi) 1 tbsp
- Boiled potatoes(aloo) 3-4 medium size
- Onion 1 large finely chop
- Coriander leaves finely chopped
- Green chilies 2-3 finely chop
- Cumin seeds(jeera) ½ tbsp
- Coriander seeds(dhania sabut) ½ tbsp
- Salt as per taste
- Desi Ghee or refined oil for frying
First of all in plain flour(atta) add salt and fenugreek leaves and knead it well to form dough. Now cover this dough and keep it aside and meanwhile do the preparation for filling.
Mash the boiled potatoes. In a pan put some ghee. When it get hot add cumin seeds and coriander seeds. Now add mashed potatoes along with other ingredients for filling. Fry this for few mins at low flame. After frying turn off the stove and let the mixture cool down to normal temperature.
Now take dough and make small balls of equal proportion. Take one ball and make depression in center or a cavity. In this cavity fill the mixture and close it from all sides and give shape of ball. Roll this ball like roti or puri. Do not try to roll very thin otherwise filling will come out of it.
Now put tawa or non sticking pan on stove. When using tawa before putting paratha make sure it is hot.
Put paratha on hot tawa. Apply ghee on both sides and cook till they turn light brown with black spots.
Paratha is ready. Serve it with dhania ki chatani or curd or pickle, even you can serve it with some vegetable curry curry.
