Arhar dal is very common food of India in different recipe. Making dal is one of the easiest recipe of Indian kitchen. There are lot of recipe for making dal and fry them, here i am giving one for making dal which is very common in Varanasi and several recipe for making tadka(Fry).
Ingredients for making dal for 2-3 serve
Arhar dal 1 full cup(150 ml).
Salt to taste.
Turmeric 1/2 table spoon.
Water 4 cup.
Raw Mango (1/2 pc pealed optional)
Tomato 1 red (optional)
Take one 3+ liter pressure cooker and wash arhar dal and add 4 cup water into this and add all other ingredients. You can also add Raw mango ot tomato or Amchur powder optionally. Finally add salt according to your taste. Put the lid of cooker and put it on stove at full flame. Wait till it blow pressure and reduce the flame at min and cook for further five min.Turn off the flame and wait till pressure of cooker is released. Mean while prepare the tadka.
Dal is ready and you can serve plain dal or after adding tadka or simply adding deshi ghee( I personally like with deshi ghee).
In my home town there is very common and simple jeera tadka for arhar dal. I will start with that.
Ingredients for Jeera tadaka
Cumin seeds( Jira) 1 table spoon.
Desi ghee 1-2 spoon.
Put one deep frying pan and put on stove. Add ghee to it, and put cumin seeds to it when ghee become hot and wait till cu.min seed getting dark gray. Add this to dal carefully.Your arhar dal is ready to serve.
Another very common tadka is tomato tadka.
Ingredients for Tomato Tadka
- Finely chopped onion 1 small.
- Finely chopped garlic clove 5-6.
- Finely chopped green chilly 1-2.
- Coriander leaves finely chopped.
- Cumin 1 table spoon.
- Ghee 1-2 spoon.
- Finally chopped Tomato 2.
- Garam Masala 1/2 table spoon(optional).
Heat a deep frying pan and put ghee to that add jeera to it and add onion and garlic to it and fry till onion gets brown. Now add tomato and you want garam masala to it and cook it on high flame for 2-3 minutes. Now add coriander leaves to it and add this tadaa to daal. You dal is ready and serve it with chapati or rice.
